Onze methode: In een baanbrekende benadering van het distilleren van rum in Puerto Rico hebben Pepe en Jose Roberto Alvarez de bijna uitgestorven Puerto Ricaanse suikerrietcultivars gered, die nu worden verbouwd, gemalen, gefermenteerd en dubbel gedistilleerd in Charentais Single Batch French Copper Pot Stills.
